Pancakes are a classic breakfast staple that everyone should know how to make. This easy-to-follow recipe yields fluffy, golden pancakes that are perfect for a lazy weekend morning.

To make these pancakes, you’ll need the following ingredients:

  • 2 cups of all-purpose flour (290 g or 10 oz)
  • 1/4 cup of granulated sugar or sweetener (60 g or 2 oz)
  • 4 teaspoons of baking powder
  • 1/4 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 1 3/4 cups of milk (440 ml)
  • 1/4 cup of butter (60 g or 2 oz), melted and slightly cooled
  • 2 teaspoons of pure vanilla extract
  • 1 large egg

  1. In a large bowl, whisk together the flour, sugar (or sweetener), baking powder, baking soda, and salt.
  2. Make a well in the center of the dry ingredients and add the milk, melted butter, vanilla extract, and egg.
  3. Whisk the wet ingredients together before slowly folding them into the dry ingredients. Mix until smooth, but don’t worry if there are a few lumps.
  4. If the batter is too thick, add a couple of tablespoons of extra milk at a time until it reaches the desired consistency.
  5. Allow the batter to rest while you heat up a nonstick pan or griddle over low-medium heat. Wipe the pan with a little butter to lightly grease it.
  6. Pour 1/4 cup of batter onto the pan and gently spread it out into a round shape with the back of your ladle or measuring cup.
  7. When bubbles begin to appear on the surface and the underside is golden, flip the pancake with a spatula and cook until the other side is golden as well.
  8. Repeat with the remaining batter.
  9. Serve with honey, maple syrup, fruit, ice cream, or frozen yogurt. You can also enjoy these pancakes plain!
